Makes about 24 cookies
- 1 cup almond butter (cashew butter)
- 1 tbsp melted butter, ghee, or coconut oil (coconut)
- 1 egg
- ¼ cup cocoa powder
- ¼ cup real maple syrup (grade is not important) (From Bloomingfoods)
- ½ cup dark chocolate chips (unsweetened is best, but semi-sweet is fine) (Enjoy Life mini choc chips)
- 2 tsp vanilla extract (real organic is best, imitation will work)
- A pinch of fine sea salt
- Pre-heat oven to 350°F.
- Mix all ingredients together thoroughly in a bowl.
- Line a baking sheet with parchment paper, scoop out pieces of dough roughly 1 heaping tbsp in size and press them onto the parchment paper in the shape of a cookie. Keep in mind that the cookies won’t expand or change shape when you bake them!
- Place in oven for 9-10 minutes until just cooked.
- Leave the cookies to cool on the sheet for 5-10 minutes before removing. This will allow the maple syrup to continue to boil off for a minute or two without over baking the cookie.

GUMBO
1 onion
3 stalks celery
1 lb diced cherry tomatoes
10 medium fresh mushrooms – sliced
1 red bell pepper diced
1 yellow bell pepper diced
2 diced jalapenos
1 bag frozen okra
(i never measure spices – i use them liberally)
plenty of paprika
salt
pepper
oregano
thyme
red pepper flakes
cumin
cayenne pepper
4 TB grapeseed oil
Saute all above ingredients until aldente
add
1 bulb fresh garlic – minced
cook for 3-5 minutes
add 1 cup dry red wine
cook another 5 minutes until wine is absorbed
add 1 quart water
2 6oz cans tomato paste
1 lbs hot sausage (put in small bits at a time like meatball size so they don’t clump or break up)
cook for 30 minutes at a boil
add 1,5lbs raw shrimp
cook 5-10 more minute until shrimp are done

preheat over to 375 to finish chicken cooking
take trimmed chicken breast – coat in a tablespoon or 2 of Dijon mustard
in a bowl mix together coconut flour and a few tablespoons of rough chopped pecan pieces
Take Dijon coated chicken and cover fulling in nut and flour mixture
in an oven save skillet melt 3 tablespoons coconut oil
sear both side of chicken breast (About 5 minutes on both sides)
put skillet w/ chicken in the oven for about 10-15 minutes

Meat Loaf- this makes A LOT
1 diced onion
2 lbs. ground meat
1 cup almond meal
2 eggs
1 can tomato paste
1 tbsp crushed garlic
1/2 tbsp basil
pepper
Mix all ingredients and form into loaf. Bake at 350 for 1 hour.
Paleo Granola
2 cups toasted coconut
1/2 cup pumpkin seeds
1 cup raw almonds
1 cup walnuts
1/2 cup pecans
1/2 cup sunflower seeds
3/4 cup honey (I normally put slightly less)
1/2 cup coconut oil (little less of this too)
2 teaspoon cinnamon
1 teaspoon vanilla
Preheat at 350. Combine nuts and seeds and lay out onto baking sheet. In a saucepan, melt together honey, coconut oil, cinnamon, and vanilla. Pour over the nut mixture. Bake for 20 minutes, and stir every 5 minutes.
Chicken Fajitas
1lb chicken breast, sliced
2 bell peppers
1 onion
2 tbsp oregano, chili powder, cumin, coriander
1 garlic clove
juice of 1-2 lemons
Combine chicken, peppers, spices, garlic, and lemon and let marinade. Then cook it all in the skillet!
Chili
1lb ground beef
1 onion
3 cloves garlic
1 can diced tomatoes
1 green bell pepper
3-4 tbsp chili powder
2 tsp. oregano
1-2 tsp. cumin
Brown the ground beef with onion and garlic. Add all other ingredients and let simmer for about 20 minutes.
Stuffed Peppers
2 peppers
1/2 lb ground meat
onion
garlic
tomato
2 tbsp chili powder
1 tbsp cumin
Preheat oven to 350. Saute the meat, onion, garlic, and seasonings. Stuff the peppers and cook for 40 minutes.
Chicken Caccitora
1 lb chicken, sliced
1 onion
garlic
mushrooms
1 large bell pepper
1 can tomatoes
1 can tomato sauce
1 tsp. oregano
pepper to taste
Spaghetti Squash
Put all top ingredients in a skillet and cook over medium heat. Cut the spaghetti squash in half and microwave for about 5 minutes each. You can then use a fork to pull out the meat of the spaghetti squash (it will look like spaghetti) and then put your chicken/sauce on top!
