Harvest Sweet Potato Stew

Not sure what to make for lunch this week? Here is an easy recipe you could make tonight and take with you tomorrow!

Harvest Sweet Potato Stew

1 pound bison/beef stew meat (even ground beef or turkey could work in here too!)
1/2 onion–chopped
1 large sweet potato
3-4 chopped carrots
1 cup chopped celery
1 can chopped tomatoes
1 cup water
1 tsp. salt
1/4 tsp. pepper
OPTIONAL: (the following ingredients make it more fall-tasting)
3/4 cup pumpkin puree
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. cloves
1/8 tsp. ginger

1. Brown meat, add water and onions, cook until onions are slightly tender.
2. Cut up sweet potato or yam into cubes and put on the bottom of a crock pot.
3. Add meat/water/onions and the rest of the ingredients to the crockpot. Cook on low for 6-8 hours.
