You don’t buy catsup anymore; you make it from scratch! Although you may feel overwhelmed with the mess in the kitchen, it’s a great opportunity to explore food! It may take some extra money, time, and patience, but eventually you’ll find a recipe you love that’s incredibly healthy. If you’re not sure about Ray’s, google paleo catsup and see what you find.
Ray’s Catsup from The Paleo Diet Cookbook
3.5 lb tomatoes sliced
2 medium onions
1 very small garlic clove
1/2 bay leaf
1/2 red bell pepper
1/2 cup unsweatened fruit juice (white, grape, pear, apple)
1 tsp whole allspice
1 tsp whole cloves
1 tsp whole mace
1 tsp celery seeds
1 tsp black peppercorn
1.5 inch cinnamon stick
1/2 cup freshly squeezed lemon juice
pinch of Cayenne pepper
- boil the first 5 ingredients until soft.
- add fruit juice
- mix spices in a cloth spice bag and add to mixture
- bring to a boil quickly, stirring frequently until mixture reduces to half the quantity
- remove spice bag
- add lemon juice and cayenne pepper
- continue boiling for 10 minutes
You can bottle the catsup in clean jars, leaving 3/4 inch of space at the top of the jar for expansion. seal and freeze if immediately if you aren’t going to use all of it. Refrigerate the container that is currently being used.
