What’s for Dinner?

Sometimes I come home and I feel like an alley dog searching for scraps in every corner of the fridge.  I also want something quick because it’s getting late.  Well, I found a solution and it’s the good ole American Burger.

We always have 1lbs. ground beef in the freezer; as you may know my family owns a farm and raise Angus as well as grow crops.  So I take the 1lb-er still in it’s plastic wrapped baggie and put it on 2 minutes in the fridge (a trick my mom taught me).  Turn it, then 30 seconds. Turn it, then 30 seconds. I keep squeezing it between heating to see if its still frozen in the middle or not.

Then I take anything I can get in the fridge – leftover greens, tomato, tomato sauces (I often don’t use the whole jar when I make spaghetti), avocado, guacamole, bacon, onions, green onions/chives, a slice of baked/pan fried sweet potato, hard boiled egg, or over-easy egg.  Think of this as your very own garbage burger.
