Paleo Spaghetti

I know there are many recipes out there when preparing your spaghetti squash, but there is a simple way to have your  ready in minutes, rather than hours.

  1. Cut it in half – short ways.
  2. scoop out the seeds.
  3. put it face down in a bowl.  cover with Saran Wrap.
  4. Microwave for 6 minutes.  I used to put water in the bottom to steam it, but its already full of water and you don’t need it.
  5. When you take it out, the bowl is going to be really hot. Have a napkin or mit ready.  When you check to see if it’s done, your fork should easily peel out the strands.  If it comes out gushy, it might’ve been in for too long, but it’s still good.  If you have a hard time getting the strands out, then cover it for another minute or so.

1 squash is enough for a whole family. We are some big eaters here, so Shaun will go for seconds with the 2nd half.  If you’re cooking for two, you can put the 2nd half in the microwave just in case you want seconds, or let it cool and store it in the fridge for a meal another day.

    jenna, i don’t even use saran wrap! i cut the spaghetti squash into quarters and each quarter i microwave 4-5 minutes.

    I have a spaghetti squash ready to go but when I was shopping for spaghetti sauce I was disappointed in how much sugar is in the premade sauces. Even the “no sugar added” sauce had lots of sugar grams. Do tomatoes just naturally have sugar? What do Paleos do about spaghetti sauce? I’ve heard people talk about eating it.

    Hi susan, I usually go to Sahara Mart or Bloomingfoods for tomato sauce. I look for only tomatoes, olive oil, and spices/herbs. I’ll follow up with you on specific titles and where to find them.
