Meal for a King

Going through the HCF Facebook blog, there are an array of pictures from last week’s challenge with beautiful descriptions, “Tuna marinated in thyme, basil, pepper, and parsley.  Eggplant battered with egg almond flour and cooked to golden brown.”

People ask me all of the time, “Paleo? What do you eat?”  I plan on changing the way I answer this question.  I used to say with a deer-in-headlights look, “Meat and vegetables.”  Perhaps, I should consider, “Garlic jalapeño bison burger topped with organic sun dried tomatoes over organic romaine lettuce with roasted lemon cucumbers.”  Don’t you think it would spark more interest?  It would appear that every dinner was a meal for a king!

The next time you spark up a conversation with someone about paleo, talk it up.  Every meal won’t be fabulous, especially when you  try a new flavor.  But don’t let your friends or family make you think that you’re missing out on “life.”  Let them know that you’re meal is cod baked in olive oil, lime juice, a pinch of salt and pepper, and a bit of cayenne pepper topped with fresh salsa and guacamole wrapped in red chard – and they’re missing out on life.
