Paleo Energy Bars by Jameson’s Mom

1 C Pecans
½ C Walnuts
1 C Almonds
1 C Unsweetened Coconut
Place in foil lined pan and roast in oven till brown, about 10 min
Then put in a food processor and coarsely grind

Melt in Microwave
½ C almond butter
½ C Coconut Oil
Stir together, then add
2 T vanilla
2 T honey

Add nut mixture and
½ C Almond meal
dried Cranberries or Raisins, etc

Stir all together
Spread in 8 x 8 plastic pan or a Tupperware rectangle dish

Freeze for 30 – 45 min,
Remove from freezer and cut into bars
Wrap individually in plastic wrap.
Keep in the refrigerator (or they will be runny)
