We had a pitch in Paleo Party at our Spring Fling and Matt F. brought a delicious dish! I put my own little twist on it and bought some cabbage to play the role of the hearty taco shell.
*ingredients I added
1lb Fscher Farms ground turkey
2 big garlic cloves or 3 medium ones
2 or 3 tomatoes
Cilantro (add at the end)
Paprika / red chili powder / cumin to taste
Sauté onions in 1 TBL oil until moisture comes out of onions. Add turkey and sauté some more; let moisture cook off; add seasonings. Add tomatoes once it needs more moisture again; cook down again; Let dry out and add cilantro. Take off heat. Eat.
When I did this, I knew that I didn’t like mushy tomatoes. So I kept them out of the mix and topped them in the end. I didn’t use cilantro because I didn’t have it. In addition, I’ve been purchasing Wholly Guacamole (really great, really!) when I have taco nights. You need to try this!
