Fudge Babies

In the very beginning you’ll hear about Paleo and eating only meat, veggies, nuts, seeds, and some fruit.  First of all, what we want to FIRST accomplish with Paleo is that our body is not using the carbs from grains and processed food as energy.  Your body can thrive and utilize protein and veggies for energy.  Stick to meat and veggies and fats before implementing a ton of fruit and dessert alternatives.  Why? You will feel full, energetic, and satisfied versus hungry, regretfully lazy, and craving sweets.

After a few weeks you can get creative with current technology and use a modern approach. For instance you can use coconut flour to make pancakes, walnut meal for brownies, almond meal and coconut flour to make biscuits, almond flour for battered fried chicken, arrow root as a thickening agent for gravy, coconut milk for custard, and more. Lets get to the bottom line.  Sometimes we might want to stick to paleo, and you know that where you’re going you’re not going touch the cake and pie, but you do want to stick to a delicious after dinner snack.

Fudge Babies were a BIG HIT at our lastest Hoosier CrossFit Pitch In thanks to our friend, Cara.  All you need is 1 1/3 cup dates, 1 cup walnuts, 3-4 TBS cocoa powder, and 1tsp. vanilla extract. Process the dates first, then add the other ingredients. When it’s all mixed together, roll them into balls!
